How to Make Cold Brew Coffee Concentrate

Here's how to make cold brew coffee concentrate:

Servings: 4 cups cold brew concentrate

Ingredients:

  • 1 cup whole coffee beans ( equals around 2 cups coarsely ground beans)
  • 4-5 cups water

Preparation:

Grind the coffee beans coarsely and transfer them into an airtight container for steeping. Pour the water over the grounds and let it steep for at least 12 hours, ideally for 20 hours. When you’re ready to use the concentrate, strain it and keep it in the fridge.

Here are 3 easy homemade ice cream recipes that use cold brew coffee to satisfy your caffeine and sweets cravings.

Cold Brew Coffee Popsicles Recipe (*Vegan*)

Servings: 6 popsicles

Ingredients:

  • 12 tbsp. cold brew concentrate
  • 12 tbsp. plant milk of choice (we love Elmhurst) or cold water
  • ½ cup maple syrup, agave, or honey (for sweetness)
  • 1 tbsp. vanilla extract
  • 1 ½ tbsp. flaxseeds or chia seeds
  • Crushed coffee beans or cacao nibs (optional)

Preparation:

In a blender on high speed, blend all the ingredients together. Transfer the mixture into a bowl and wait until it starts to thicken. Add the crushed coffee beans/cacao nibs, stir to incorporate, and pour the mixture into popsicle molds. Freeze overnight.

Cold Brew Coffee Ice Cream Recipe

Servings: 1 pint (around 4 servings)

Ingredients:

  • 6 tbsp. cold brew coffee or coffee concentrate (add more for stronger taste and more caffeine)
  • 1 can coconut milk (full fat) or 2 cups heavy whipping cream
  • 1 tsp. vanilla extract
  • ¼ - ½ cup agave, maple syrup, or honey
  • 1/4 cup nut butter of choice (optional)
  • A pinch of salt

Preparation:

Add all ingredients in a high-speed blender and blend until well incorporated. Pour the mixture in an ice cream maker and churn for about 30 minutes. Transfer into a container and freeze for 1-2 hours.

Note: To churn the ice cream yourself, place the mixture in the freezer and every 45 minutes, stir it with a hand mixer. Then put it back in the freezer and repeat this process for the next 2-3 hours until the ice cream becomes fluffy and creamy.

If you skip the churning, the ice cream will not be as creamy. After blending, pour the mixture into a container and place it in the freezer overnight.

  • ½ cup chocolate chips (optional)

Preparation:

In a blender on high speed, blend all the ingredients together (without the chocolate chips). Transfer the mixture into chilled glasses and drizzle caramel or chocolate sauce on top. Sprinkle chocolate chips and serve immediately.
