Cold brew coffee can sit in the fridge for days and you’ll always have a cup of fresh, ice-cold coffee to get you out of a slump. You can also bake desserts and cakes with cold brew coffee as it has a slightly sweet taste compared to regularly brewed coffee.

This is because the acidity and bitterness of the beans aren’t as pronounced during the cold brewing process, so the result is a smooth cup of caffeinated cooling goodness.

How to Make Cold Brew Coffee Concentrate

Cold brew concentrate is the basis for making cold brew coffee or iced coffee. By adding liquid to the concentrate in the form of milk or water, you can adjust the caffeine content and strength of the coffee.

Here's how to make cold brew coffee concentrate:

Servings: 4 cups cold brew concentrate

Ingredients:

  • 1 cup whole  beans coffee
  • 4-5 cups water

Preparation:

Grind the coffee beans coarsely and transfer them into an airtight container for steeping. Pour the water over the grounds and let it steep for at least 12 hours, ideally for 20 hours. When you’re ready to use the concentrate, strain it and keep it in the fridge.

Cold brew coffee is sweeter in taste than regularly brewed coffee as this brewing method leaves the bitterness of the coffee beans behind.

Cold Brew Coffee Muffins

Servings: 12-15 muffins

Ingredients:

  • 2 cup all-purpose flour
  • 1 ½ tsp. baking soda + 1 ½ tsp. baking powder
  • ½ cup cocoa powder (optional)
  • 1 large egg
  • 12 tablespoons brown sugar (or a sweetener of choice)
  • A pinch of salt
  • ½ cup cold brew coffee (or ¼ cup cold brew coffee concentrate)
  • 1 cup milk of choice (we recommend Elmhurst)
  • ½ cup butter (1 stick), softened at room temperature
  • 1 tsp. vanilla extract

Preparation:

Preheat the oven to 350 degrees F (180 degrees C). Prepare muffin tin with liners.

In a large bowl, beat the sugar and butter together until creamy and fluffy. Add the vanilla extract, egg, coffee, and milk and mix until incorporated.

In another bowl, mix the dry ingredients. Add the wet ingredients into the dry slowly, mixing the batter with a silicone spatula. Fill muffin tin liners halfway through with batter and bake for at least 20 minutes. Check with a toothpick to see if the muffins are ready. Let them cool completely before serving.

Ingredients:

For the coffee cake batter:

  • 2 to 2 ½ cups all-purpose flour
  • ½ tsp. salt
  • 2 cups brown sugar, powdered
  • 2 tbsp. baking powder
  • 10 tsp. cold brew coffee concentrate (more if you want a stronger flavor)
  • 1 cup butter, melted
  • 1 tbsp. vanilla extract
  • ½ cup of milk of choice
  • 2 large eggs or 3 small eggs
  • ½ cup vanilla yogurt

For the coffee filling/icing:

  • 2 sticks butter, room temperature
  • 3 ½ cups powdered sugar or powdered stevia
  • 2-4 tbsp. cold brew coffee concentrate
  • 2 tbsp. heavy cream
  • ¼ tsp. vanilla extract

Preparation:

For the coffee cake layers:

Preheat the oven to 350 degrees F (180 degrees C). Prepare 2 separate cake pans by greasing them with a thick layer of butter or shortening. Sprinkle some flour over the shortening to coat the pans. Do not skip this step.

In a large bowl, mix the flour, salt, sugar, and baking powder. In another bowl, mix the melted butter and cold brew coffee concentrate. In a small bowl, mix the vanilla extract, eggs, and vanilla yogurt. Pour the egg mixture into the dry ingredients and stir gently to combine. Slowly add the coffee and butter mixture. Stir to combine until the mixture is smooth and lump-free.

Preparation:

In a bowl, beat the butter and sugar together until light and fluffy. Add the eggs and mix to combine. Add the yogurt (or sour cream), vanilla extract, and coffee. Mix to combine.

In a different bowl, mix the dry ingredients together and slowly add them to the wet ingredients, mixing constantly to incorporate.
